Amongst the pallets and the fridges of Harcourt apple cooperative hides a fountain of inspiration.  Gilles Lapalus’s story is almost as exciting as his wines. He makes Australian wine with French passion in the heart of Victoria, near trendy and tranquil Castlemaine.  Arriving in Australia in 1987 Gilles has seen the evolution of the industry, bringing unrivalled experience and insight from far flung corners of the world.  With a deep respect for the history of oenology Gilles’ philosophy is founded on tradition but fuelled by innovation; turning side projects into trends he trail-blazed the Australian pet-nat scene, concrete egg fermenters, vermouth and now piquette (find out more here).  Gilles works with growers from around the region, encouraging biodynamic practices he works to ensure his impact on the environment around him is as light as possible.  Gilles knows his own mind and has followed his heart, leaving a formidable legacy that’s still being written.  His talent is matched only by his charm and joie de vivre.  A tasting with him will be entertaining, educational and most importantly delicious.
